Fudge Sauce
{ MAKES 1½CUPS }
This thick fudge sauce gets an extra layer of delish from the addition of crème fraîche, which is basically cream that’s been left to sour a bit. You may have to pay attention to know it’s there, but that slight hint of tanginess transforms a simple chocolate confection into something otherworldly.
⅔ cup heavy cream
½ cup light corn syrup
⅓ cup crème fraîche
⅓ cup dark brown sugar
¼ cup cocoa powder
¼ teaspoon salt
6 ounces bittersweet chocolate (70% cocoa), chopped
2 tablespoons butter
1 teaspoon vanilla extract
